This week we’ve been hit by so much bad news, that well, it’s time for another contest.

With The Everything Mexican Cookbook you can really start cooking some grub with Mexican flavor. At first, I didn’t really trust the author (with a name like Margaret Kaeter, can you blame me? But aren’t I a little biased regardless of her name?), but then little by little she started to win my trust, as she churned out recipe by recipe, until there were well nearly 300 of them.
Actually she drew me in from the introduction where she wrote this about the mainstream Mexican restaurants: “In their efforts to create meals taht appeal to a palate not accustomed to spicy foods, they have eliminated the subtle blendings of flavors and the wonderful textures of Mexican meals.”
But if it’s one thing that Kaeter doesn’t do with her recipes, it’s too water things down. She first starts us off, with the so-called basics, you know tomato salsa, chili con queso, picante sauce, and then graduates with more delicious stuff, like the hot and spicy tripe. Tripe really intimidates a lot of people, so she has a lot of other stuff too like fideo con carne, which she suggests cooks serve with pineapple and coconut salad. And speaking of pineapple and coconut, there are plenty of desserts for your palate like the pineapple and almond pudding and pepita balls.
And if you’ve ever wondered what the difference is between Mexican meatloaf and the run-of-the-mill meatloaf, it’s 1/4 cup of pimiento-stuffed green olives!

2. I haven’t realy eaten any “exotic” foods. But one thing is that I had to eat a pig’s ear when I was little. It was for dinner,and I always had to finish everything on my plate. It was so disgusting,rubbery and what not. I stay away from “exotic meat”. But I will try any new fruits or vegetables,I love squash stew,and that might be a little exotic to some people.

Comment made on July 13, 2009 at 3:29 pmjust RT’d - I used to work for a beef company a couple of years ago, so I had to try a several “interesting” items before selling to my clients, such as:
*Marinated tripe
*Tunic Tissue
*minosando (think it’s a type of tripe, or part of the tripe…)
I’ve also had moose jerky once.

Surprisingly delish for this gringa… but it was all about the lime and cilantro. Also tried the cow tongue at the same time. It was equally delicious. I’ve had some alligator before, oddly enough in a taco. It seems as though my new/exotic foods are always carried in corn tortillas.
